Quick and Simple Home Made Tomato Soup !






When the weather is getting colder and the days are getting shorter, it’s time to make homemade soup. My favorite is Tomato Soup and I am talking about one that you can make when you get in from work or from walking the dog on a chilly Fall evening. This recipe is simple to follow and great for school lunches, or to take to work the next day. I like to make this on the weekends and triple the recipe and freeze the leftovers. When freezing, store in individual containers and take out of the freezer the morning you leave for work. When you return home you are ready to warm up a great dinner and serve with a french baguette. Then, get ready to relax with a great comfort food.

Ingredients:
3 slices of smokey bacon,sliced
1 can of whole peeled tomatoes
1 can of tomato sauce
1 yellow onion , chopped
1 clove or garlic, minced
Fresh Basil leaves, minced
Fresh Oregano, minced
1 cup of whole milk
Fresh grated Parmesan Cheese
French Baguette
Sea Salt and Fresh Ground Black Pepper to taste

Directions:

Step 1. In a large soup pot add your bacon and fry till crispy and remove from the soup pot add the onion and saute till cooked through.

Step 2. Add the Oregano,fresh basil,Oregano and garlic and saute till well mixed.


Step 3. Add the whole tomatoes and the juice to the mixture and stir till the tomatoes are warm through and add the tomato sauce stir till its well mixed. Add the milk and keep stirring.

Step 4. Cook on a medium heat for 35 min. Place in a blender and process till smooth place back in the soup pot and heat through before serving and your sea salt and fresh ground black pepper to taste.


Helpful Hint: When serving in soup bowls or mugs crumble the bacon on top and add the fresh Parmesan Cheese for garnish and serve with your warm French Baguette bread.
